Elvis Gooey Butter Cakes

Ingredients

  • 1 (18 1/4 oz) package yellow cake mix
  • 1 egg
  • 2 sticks butter, 1 melted and 1 for filling
  • 1 (8 oz) package cream cheese, softened
  • 3 eggs
  • 1 teaspoon vanilla
  • 1/2 cup peanut butter
  • 1 whole banana, mashed
  • 1 (16 oz) box powdered sugar

Preparation

Preheat the oven to 350 °F.

Combine the cake mix, egg, and 1 stick melted butter together and mix well. Pat into a lightly greased glass 13 by 9-inch baking pan. Prepare the filling.

Beat cream cheese until smooth. Add the eggs and vanilla. Add the peanut butter; beat. Add the banana and 1 stick butter and mix well. Add the powdered sugar and mix well. Spread over the cake mixture. Bake for 45 to 50 minutes. You want the center to be a little gooey, so do not over bake. Top each cake slice with a mint leaf and dollop of whipped cream.

I wanted to reply to Heidi. My child also has a severe peanut allergy. We use WOWBUTTER as a replacement. It is a toasted soy butter that really tastes like peanut butter. It is so much better than any other soy butter we have ever tasted. It is awesome! It is made in Canada, but we buy it at our local Walmart. I have seen it in other stores as well, but Walmart is definitely cheaper.
I haven't tried this recipe yet, but apparently I have to choose a rating. So, I will rate it on how yummy it sounds.
